Professionale Commercial Pizza Oven Fully Assembled

The Professionale FA Series commercial pizza oven is a family of assembled ovens designed for smaller restaurants, pizzerias, cafes and bistros, as well as larger restaurants, looking for a wood or gas fired commercial pizza oven to complement other cooking equipment. While the Professionale commercial pizza oven is smaller, and less expensive than the Modena2G commercial pizza oven, they are built using the same ultra-premium refractory and insulating materials, and feature optimal oven proportions, including the perfect Oven Dome Height and Oven Opening Size for baking Pizza Napoletana.

Each commercial pizza oven features a commercial-grade 3″ cooking dome, a 2.5″ firebrick tile cooking floor and extra thick 4″ (side and floor) – 6″ (top) ceramic insulation, providing both the perfect oven for baking artisan pizza and excellent value.

The Professionale FA Series commercial pizza oven is available in 44″ and 48″ sizes, either wood-fired, of Gas with Gas/Wood Combo.

All Professionale ovens can be vented three ways, including directly with a connected UL103HT chimney system or grease duct vent, or indirectly with a Listed Type 1 hood.

 

Five Advanced Technologies:

  1. The Professionale 3” oven dome is produced using a proprietary 142 pcf density, 8,230 psi strength refractory material with poly-fibers for additional strength not found in brick or clay ovens.
  2. All manufactured in our Salinas, CA factory using a two-sided, vibrated mold casting process. It is a remarkably hard and durable material designed to provide many years of 24/7 operation.
  3. The Professionale 2.5″ oven floor is constructed using large 18”x18”x21⁄2” ultra-premium (2,700psi compressed and 2,650ºF kiln-fired) baking tiles with Cordierite — for superior thermal shock resistance and durability, and for great pizza baking.
  4. The gas-fired version of the Professionale pizza ovens provides a high heat, high throughput pizza baking experience that accurately replicates a true wood fire.
  5. The Professionale gas commercial pizza ovens can operate in both gas-only and gas/wood modes.
